Das Flap Meat kennt der ein oder andere bestimmt schon aus unseren Wagyu-Wundertüten. Auf vielfachen Wunsch bieten wir den Cut (auch Flap Steak oder Großes Bavette genannt) diesmal auch einzeln an. Das flache Teilstück ist grobfaserig, sehr saftig und besitzt eine schön ausgeprägte Marmorierung. Bei der Zubereitung eines Flap Meat Steak, das aus dem Bauchmuskel unterhalb des Brustkorbs zwischen Brisket und Flank Steak stammt, sollte folgendes beachtet werden: medium rare grillen oder braten und dann dünn gegen die Faser aufzuschneiden.
