Das Picanha ist der absolute Klassiker des südamerikanischen Churrasco. Hierzulande wird der Hüftdeckel vom Rind aufgrund seiner charakteristischen, spitz zulaufenden Form meist „Tafelspitz“ genannt und ist gerade Süddeutschland und Österreich traditionell als Siedestück fester Bestandteil der Esskultur.
Doch dass dieses Stück auf den Grill gehört, mussten uns erst die Brasilianer mit ihren klassischen Fleischspießen zeigen. Du hast die Wahl, ob du dein Wagyu-Picanha im Ganzen grillst, einzelne Steaks portionierst oder auf die südamerikanische Art - am Spieß - zubereitest.
